Pasta with Asparagus and Pine Nuts





INGREDIENTS


陆 cup pine nuts


3 tablespoons extra-virgin olive oil


1 garlic clove, finely minced


陆 pound thin asparagus, cut diagonally into 1-ich pieces


1 pound pasta (this recipe recommends farfalle, but use any type you fancy)


2 tablespoons minced fresh dill


Zest and juice of one fresh lemon


Salt and freshly-ground black pepper





HOW DO YOU DO IT:


1. Lightly toast the pine nuts in a dry skillet over medium heat until golden brown, about 1 to 2 minutes. Transfer the nuts to a small bowl and set aside.





2. Reheat the skillet with 1 tablespoon of the olive oil over medium heat. Add the garlic and asparagus, and cook until the asparagus is slightly tender, about 4 to 5 minutes.





3. Cook the pasta in a large pot of boiling salted water, stirring occasionally, until it is al dente, about 8 to 10 minutes. When the pasta is cooked, drain it and place it in a large serving bowl with the asparagus and pine nuts.

Onion Spaghetti





INGREDIENTS


2 tablespoons olive oil


4 large onions, sliced


2 cloves garlic, crushed


1 tablespoon tomato paste


1 (14.5 ounce) can whole peeled tomatoes


1 teaspoon salt


1/2 teaspoon freshly ground black pepper


1 tablespoon chopped fresh basil


1/4 cup water


1 pound spaghetti





DIRECTIONS


Heat oil in a large skillet over medium heat. Cook onions and garlic in oil until soft. Stir in tomato paste, tomatoes, salt, pepper, basil and water. Cover, reduce heat to low, and simmer 20 minutes, until thickened.


While sauce is simmering, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.


Toss sauce with hot pasta.

    1 10 oz. bunch fresh spinach or 1 10 ounce package


    plain frozen spinach, cooked and finely chopped with


    all the liquid pressed out


    1 tablespoon oil

    3 oz package cream cheese, room temperature, cubed

    In a heavy medium saucepan, heat oil over medium heat. Add onion and cook, stirring until limp and clear, 3 to 4 minutes. Add flour and cook, stirring, 1 minute.





    Add spinach and green chilies. Cook and stir until well mixed, about 1 minute. Add cream and cook until mixture begins to boil, about 1 minute.





    REDUCE HEAT to low and gradually add cream cheese, stirring until cheese is melted, 1 to 2 minutes. Gradually add the Monterey Jack cheese, stirring until melted. Do not allow mixture to boil or cheese will separate. Serve at once with tortilla chips for dipping. Server 4 to 6

    2- boxes frozen chopped spinach


    2-10 3/4 oz cans cream of chicken soup


    12 oz. shredded sharp cheddar cheese


    salt, pepper and garlic powder to taste


    Cook the spinach according to package directions and drain VERY well. (Squish it in the collander to get all the water out.)


    Return to pan over very low heat and mix in the soup until warm. Season with salt, pepper and garlic powder to taste. Slowly add the cheese, stirring often until cheese is all melted and blended in.


    EAT! Originally my family ate this over puff pastry shells, but I like to eat it just as it is!

    Honestly, I don' t think a low fat recipe exists!! Here is my recipe - I used it for my wedding favors and still get compliments!!





    Worlds Easiest Fudge





    1 陆 cups chocolate dipping wafers (white or chocolate)


    2 Tblsp butter (NOT hard margarine)


    戮 cup condensed milk


    陆 to 1 cups add ins (Skor chips, nuts, raisins, dried cranberries, etc)


    1 to 2 tsp flavoring





    Line a loaf pan with tinfoil and spray with a non stick cooking spray (do NOT skip this step). Pour dipping wafers and butter in a microwaveable glass bowl. Melt on high stirring every 30 seconds (2 to 3 minutes). Stir flavoring into condensed milk, add to melted wafers. Mix well and add any additional add ins. Pour into lined loaf pan and let set in fridge for 1 hour. Pull out using excess foil at edge and cut into bite sized pieces. Enjoy!

    Salt


    3 cups water


    1/2 pound ground beef


    1/2 cup mushrooms, sliced


    1 jar spaghetti sauce (15-1/2oz.)


    3 Tbsp. Parmesan cheese


    1/2 cup onion, chopped


    1/2 cup milk


    1 egg


    8 oz. mozzarella cheese, grated


    1 pizza pan


    aluminum foil


    Cover pizza pan with aluminum foil. Build up foil edges to form about 1/2'; tall rim around the pan. Lightly grease the aluminum surface.     I'll just tell you what I often do when I want something tasty and fast. I very lightly cook - either in water, or steam which I prefer - the noodles, and set aside. Then I get a packet of frozen stir-fry vegetables and lightly steam (they do really good in the microwave - just don't let them get mushy). Get a ;packet of stir-fry flavoring mix, make it up to the directions, and pour it over your steamed stir-fry veggies in a skillet, or wok if you have one. When blended, add in your cooked Ramen Noodles, and mix well. If you want to separately sizzle some little bits of steak, or chicken , you can then toss those in with the vegetable/noodle mix.


    Then when I call the hungry guys to the table, I just try to look glassy-eyed and worn (maybe sigh a little) as if I had truly slaved over this meal, and then watch while they groffle it down with lots of mmms, and yumms. LOL. Especially good if you put a big bowl of mixed fresh salad on the table and some warm crispy french bread. And if you just happen to have one of those packets of individual icecream fudge sundae thingies in the freezer, that you can break out and serve with spoonful of slightly warm fruit sauce, you might just be able to ask a favor or two, while the bliss is still washing over them.
    When I want an easy, last-minute meal:


    Break package of Ramen noodles into large soup bowl;


    Sprinkle in seasoning packet.


    Top with a handful of cubed cooked chicken.


    Add dollop of crushed garlic (jar) and pinch crushed red pepper.


    Pour 1 1/2 cups water over.


    Microwave 5 minutes and stir. Sprinkle with sliced scallions.

    This simple crockpot soup is full of flavor and color.


    INGREDIENTS:


    鈥? boneless, skinless chicken thighs


    鈥? sweet potatoes, cubed


    鈥? onion, chopped


    鈥?6 oz. bag baby carrots


    鈥?/2 tsp. dried thyme leaves


    鈥?/8 tsp. pepper

    鈥?-1/2 cups water


    鈥? (3 oz.) pkg. chicken flavor Ramen noodle soup mix


    PREPARATION:


    In a 4 to 5 quart crockpot, layer sweet potatoes, sliced onion and chicken thighs. Sprinkle with thyme, pepper, and bay leaves. In a small bowl, blend 1 cup water and seasoning packets from Ramen and stir to blend.





    Pour over chicken and vegetables in crockpot, then add rest of water.


    Cover crockpot and cook on low for 7-9 hours or until vegetables and chicken are tender. Remove and discard bay leaves. Stir in ramen noodles and cover. Cook on high 10-12 minutes or until noodles are tender, stirring once during cooking. 6-8 servings
    I love Ramen Noodles also. For a variation add frozen veggies, hot pepper (Red Chili Flakes), pieces of shredded cooked chicken (from a can is fine), shrimp, leftover thinly sliced steak or pork chops, scallions (sliced green onions), and or canned, drained water chestnut for crunch.





    Believe it or not the Ramen Noodles also make a great change of pace salad. Take washed and dried romaine lettuce torn into bite-sized pieces and sliced slivered almonds (from a small package), a can of drained Mandarin orange slices, and broken up raw Ramen noodle pieces. Use the left over juice from the mandarin oranges and the spice packet with a little oil to make the dressing. Pour on top and


    toss. Enough for you and several friends for little $.
    Easy Cheesy Spicy Ramen





    1 package of Beef Ramen


    1 teaspoon of Mayonnaise


    1 teaspoon of Horseradish


    2 dabs of Hot Sauce of your choice


    1 tablespoon of Nacho Cheese (the dip kind)





    Boil your Ramen, then drain leaving no water. Mix in the seasoning packet, mayonnaise, horseradish, hot sauce and nacho cheese thoroughly. Enjoy!
    Take a zip-loc bag, size depends on how much you want. Put in the noodles with/without the powder. Chop up some Polish Sausage and Cheese and add. You can put whatever you want. Dried Onions are good. Mix and add hot water, not, much, maybe a 1/4 cup plenty for one bag. Seal and roll it up and let sit for about 5-10 minutes until the Noodles soften. You not want this real wet, all the water should absorb. Then take Flour Tortillas and make Burritos and eat. You can Fry them in a little Peanut oil (I prefer) any oil work.

    1 tbl chili powder


    1 tbl oil


    2 x half chicken breasts, boned and skinned


    1 x red or green pepper, cut in strips


    1/2 x red onion, thinly sliced


    assorted greens


    1 pkt maruchan chicken ramen, broken or crushed.


    avocado and tomato wedges.


    Dressing:


    4 tbl lime or lemon juice


    2 tbl soy sauce


    ramen seasoning packet


    1 tsp sugar


    2 tbl oil


    2 tbl chopped cilentro (1 tsp dried)





    Pat chili powder onto chicken breast; brown in hot oil. Cover, cook until done. Remove and cut into strips. Saute pepper strips in pan.


    Whisk dressing ingredients together. Toss with chicken, pepper strips, onion and broken ramen noodles. Serve on greens, Garnish with avocado and tomato.

    1 1/4 cups unbleached flour

    A friend gave me her recipe for chocolate chip cookies about 15 years ago -- these are so good, and make A LOT.





    1 c. butter, room temp


    1 c. brown sugar


    1 c. sugar


    2 eggs


    1 t. salt


    1 t. vanilla


    2 c. all purpose flour


    1 t. baking powder


    1 t. baking soda


    2 cups dry quick cooking oats


    2 c. corn flakes


    1 c. mini chocolate chips


    1 cup chopped nuts





    Combine all ingredients in a very large mixing bowl, blending well. Drop by teaspoon onto lightly greased cookie sheet. Allow room between cookies, they will spread during baking. Bake 10 - 12 minutes at 375 degrees, or until light brown. Let cool on cookie sheet 1 minute before transferring to wire rack.
    These were given to me from my great grandmother. They are sooooooooo good!!! Do not double the recipe will not turn out the same. What I do it make 2 batches in 2 bowls.

When I make doughnuts they seem like some greasy oblong doughy mess and I can't figure out why. I bake a lot and my cookies, pies and cakes turn out wonderfully.     1/2 cup milk


    1/4 cup plus 1 tablespoon solid vegetable shortening


    2 packages active dry yeast

    In a small saucepan, warm the milk with the shortening over low heat until the shortening is almost melted. In a large bowl, stir the yeast into the warm water, sprinkle with a pinch of sugar and let stand until foamy, about 3 minutes. Stir the warm milk mixture into the yeast along with the 1/2 cup of sugar and the sour cream, the whole eggs, egg yolk, salt and vanilla. Gradually stir in 4 3/4 cups of the flour until a soft, sticky dough forms. Scrape the dough out onto a floured surface and use a pastry scraper to knead the dough until smooth, adding as much of the remaining flour as necessary. The dough should be soft and slightly sticky, but smooth and elastic.





    Gather the dough into a ball, transfer it to a lightly oiled bowl and cover with a sheet of oiled plastic wrap. Let the dough rise in a warm, draft-free spot for 2 hours. Punch down the dough and turn it over in the bowl. Cover and refrigerate the dough for 2 hours or overnight.





    On a lightly floured work surface, roll out the chilled dough 1/3 inch thick. Using a 3 1/2-inch doughnut cutter dipped in flour, cut out as many doughnuts as possible and transfer them to a sheet of floured wax paper. The scraps can be rerolled once to cut out more doughnuts. Loosely cover the doughnuts with wax paper and let rise until soft and billowy, about 20 minutes.





    In a large, heavy skillet, heat 4 inches of vegetable oil to 365掳. Line a rack with several paper towels. Working in batches, fry the doughnuts until golden brown, about 1 minute per side. Check the temperature of the frying oil to make sure it doesn't get too hot or cool. Using a slotted spoon, transfer the doughnuts to the paper towel lined rack to drain. Serve warm or let cool before glazing with the Dark Chocolate Glaze or Vanilla Glaze and decorating with chopped nuts, coconut and sprinkles.





    Make ahead*: The recipe can be prepared through Step 2 and refrigerated overnight. The finished doughnuts can be made up to 4 hours ahead.





    Notes: Variation: To make jelly doughnuts, cut out 2 1/2-inch rounds of dough with a biscuit cutter. Fry as instructed above. Once the doughnuts are cool, use a piping bag to squeeze jelly into the sides of the doughnuts.





    Dark Chocolate Glaze: Makes 2 cups


    2 ounces bittersweet chocolate, chopped


    2 1/2 ounces unsweetened chocolate, chopped


    3/4 cup heavy cream


    3/4 cup plus 2 tablespoons sugar


    4 tablespoons unsalted butter, at room temperature


    3/4 teaspoon pure vanilla extract


    Salt





    Place the chopped chocolates in a medium bowl. In a small saucepan, combine the heavy cream with the sugar and cook over moderate heat, stirring, until the sugar dissolves. Pour the warm cream over the chocolate and let stand until melted, about 5 minutes; whisk until smooth. Whisk in the butter, vanilla and a pinch of salt. Let the dark chocolate glaze cool until slightly thickened, about 15 minutes.





    Vanilla Glaze: Makes 1-1/2 cups


    5 cups sifted confectioners' sugar


    1/4 cup milk


    1/4 cup light corn syrup


    1 teaspoon pure vanilla extract





    In a medium bowl, whisk the confectioners' sugar with the milk and corn syrup until smooth. Stir in the vanilla.





    Variation: To make a frosting suitable for piping, stir 1 1/2 cups confectioners' sugar into the glaze.

    RAISED GLAZED DONUTS





    4 oz. shortening


    1 qt. water


    4 oz. yeast


    4 oz. sugar


    10 c. flour, no more





    Measure yeast into 1 cup of the quart of warm water. Add sugar, let set a few minutes. Then gradually add water and flour, after you have about half mixed, blend or mix in the shortening, which should be room temperature. Mix all ingredients thoroughly, let rise double in bulk.


    Take half or a third and roll out, shrink by flipping edges of dough. Cut out, let rise about double in bulk, before cooking center from donut. Be sure it is hot enough. Maple bars can be made from this recipe.








    GLAZE FOR DONUTS:





    1 1/2 c. powdered sugar


    3 tbsp. boiling water


    Vanilla to taste
    There is a simple recipe for making donuts....buy a can or more of Pillsbury grands biscuits, cut a round hole in the middle for donut holes....I use a large round icing tip to do this !!!! works perfectly. have your skillet or pot ready with the hot oil, and place your donuts in and turn over . The donuts brown very quickly!!!! make sure you have your icing ready.... I use powdered sugar with a little vanilla flavoring and water mix with wire whisk and turn on both sides in icing,as soon as you take all of them out. Let donut rest on cookie rack for excess icing to drain off. Hope this helps....I call this semi-homemade cooking.
    Well it is like making bread. You don't over work the dough. You let it fully rise before you roll it out and cut it. You let it fully rise before you fry. It's an all day job if done right.
