5 tablespoons powdered milk

鈥?Caramel Apple Cheesecake

鈥?1 (21-ounce) can apple pie filling


鈥?1 (9-inch) graham cracker crust


鈥?2 (8-ounce) packages cream cheese , at room temperature


鈥?1/2 cup sugar


鈥?1/4 teaspoon vanilla extract


鈥?2 eggs


鈥?1/4 cup caramel topping


鈥?12 pecan halves, plus 2 tablespoons chopped pecans


Directions


Preheat the oven to 350 degrees F.


Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.


Bake for 30 to 35 minutes, or until the center of the cake is set. Cool to room temperature.


Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute, or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

Here's my cheesecake recipe.


I make the crust according to the directions on the graham cracker crumb box( use real sweet butter not margerine). To start I assemble a spring form pan and spray lightly with Pam cooking spray. I split a piece of wax paper length wise and line the inside of the spring form pan, then I lightly pack the crust on the bottom of the pan. Preheat the oven to 300 degrees and place a shallow pan of water on the lowest rack. Then pour the batter into the pan and place directly the rack right over the water pan. Bake about 1 1/2 hrs. ( The cake will rise on the edges first and then in the center.. that's how you know that its ready ). Turn off the oven and crack the door. Let the cake cool for an additional hour in the oven then remove and chill overnight in the refrigerator uncovered.


Batter:


2 Pounds Cream Cheese


2 Cups Sugar


2 Cups Sour Cream


3 Eggs


1 Teaspoon Vanilla (real not imitation)


Bring Cream Cheese to room temp. Beat until smooth add sugar. Combine Sour cream , Eggs, and vanilla and then add slowly to Cream cheese mixture.


This is the basic Cheesecake batter for Pina Colada I add well drain crushed pineapple, coconut , and Rum extract(flavoring). You can be creative with the basic batter. Don't be afraid I've never made a bad cheesecake yet.

Crust


2 cups graham cracker crumbs


1/2 cup sugar


4 Tbsp melted butter


1 large egg white lightly beaten





Preheat oven to 375潞F. Mix all crust ingredients and press into bottom and a little way up sides of 10 inch springform pan. Bake for 5-10 minutes. Cool until reaches room temp.





Filling


5 packages of cream cheese


1 3/4 cups of sugar


2 large eggs


1 Tbsp fresh lemon juice


1 Tbsp vanilla extract


2/3 cup heavy cream





Reduce oven to 325潞F. Wrap bottom of sprinform pan with alumium foil. A few sheets.





Beat cream cheese and sugar until smooth. Best if done when cream cheese is at room temperature. In a small bowl lightly beat eggs, lemon juice and vanilla. With mixer running slowly add egg mixture to cream cheese. In about 4 increments.Add heavy cream next. Mix well.





Pour cream cheese filling into springform pan. Place springform pan in a shallow roasting pan and fill roasting pan with enough hot water to come up half inch of springform pan.





Bake for 60 to 90 minutes, or until center is firm.
