What is your best Pancake recipe?

Hi there...


I am pregnant and I need pancakes ;)


I have been looking for a good recipe for them and most of the ones I found use Baking Soda. I don't have baking soda and the shops are all closed.. Can anyone out there give me a good recipe that doesn't use Baking Soda?





Does anyone know what Baking Soda does to pancakes anyway?

Baking soda is a raising agent that makes the pancakes fluffy - you could use baking powder, or self-raising flour.





Do you want american style pancakes that are thick and fluffy, or french style, crepes, which are thin and lacey? The french ones don't need a raising agent - you just make the same batter but a bit thinner, and make the pancakes bigger - about 8'; and thin, cook in the same way as regular pancakes, roll up with sugar and lemon juice (which is the British way). Absolutely delicious, and an addition to your cooking repertoire!

Here is an easy pancake recipe to use and you don't need any baking soda.








INGREDIENTS


3 eggs


3/4 cup milk


3/4 cup all-purpose flour


1/4 cup butter


2 tablespoons confectioners' sugar








DIRECTIONS


Preheat oven to 425 degrees F (220 degrees C). Place butter in a 10 inch cast iron skillet and heat the skillet in oven.


Beat eggs at high speed with an electric mixer. Slowly add the milk and flour.


Pour batter into hot skillet. Return skillet to oven and bake for 20 minutes. It will rise like a souffle, then fall when taken out of oven. Lightly dust with powdered sugar and serve.

Mom's Applesauce Pancakes





INGREDIENTS


2 cups dry pancake mix


1 teaspoon ground cinnamon


2 eggs


1 cup applesauce


1 teaspoon lemon juice


1/2 cup milk








DIRECTIONS


In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.


Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
