What is your best Potato salad recipe?

Ookkay here it goes... This is a family favorite that has been passed on for quite some time, its scrumdiddlyumcious!!!





10/12 Whole White Potatoes- Boiled and then peeled and cubed.


5/8 Eggs- Peeled and chopped finely. (Optional)


1/2 Onion- Chopped %26amp; Minced.


1/2 Green Pepper- Chopped and Minced.


13/15 Mini Pickles- Chopped and Minced.


1/2 or more to taste Mayonaise jar.


1/2 or more to taste Mustard bottle.


1 1/2 cup of pickle juice.


Fresh Bacon Bits (optional)


Onion Powder, Garlic Powder, Parsley, Salt %26amp; Pepper.


(Serve warm or chilled)





In our family we like ours very creamy, but not dripping that's just gross!!! Hope you enjoy as much as my family and many's before!!!

This is my own personal very traditional potato salad:


5 lbs Yukon gold potatoes (always use gold)


1 dozen hard-boiled eggs


1/2 minced vadelia onion


Hellman's light mayonaise (nothing comes close to Helman's)


Salt


Black pepper


Dash of garlic powder


Dash of paprika





Peel and cube potatoes. Boil over medium high heat until slightly soft -- firmer than you would be mashed potatoes. Boil eggs.





Here's a secret to hard-boiled eggs that are easy to peel. As soon as you take them off the stove, drain all the hot water and fill the pot with cold water. Dump a few cups of crushed ice into the pot of eggs and water. The shock in temperature from hot to cold pulls the shell away from the egg.





I use an egg slicer to slice the eggs. It's much faster and makes perfect little slices. Put the egg in one way, slice, then carefully pick it up and turn it the other way, then slice it again. Save 2 eggs for slices on top of the salad. Only slice those two eggs one way.





Put cooked potatoes in a large bowl, add sliced eggs. Add about 1 cup of mayo, minced onion, garlic powder, salt, and black pepper to taste. FOLD (do not mix too vigorously or you'll end up with mashed potatoes) the mixture together, add another cup of mayo and continue folding. When mixture is blended, make the top kind of smooth, and place the slices from the 2 saved eggs on top. Sprinkle the paprika over the whole thing very lightly.





The flavors mix together, and it's better the second day. So, if you have the time, refrigerate over night.





It should serve a bunch of people -- maybe 10. Five pounds of potatoes plus a dozen eggs is a lot of food. You'll have to calculate the recipe if you're making less. Of course, my husband always says that even if I make way too much, there's more left-overs for him! :-)What is your best Potato salad recipe?
in my hometown used to make a salad of these .. into three pots with water with a little salt leads to boil potatoes, carrots, and peas .. (potatoes should not be soft on the contrary should be a little more hard so you do not lose consistency ...) that after all this boiled and strained mixture into a bowl potatoes carrots and peas and add mayonnaise, salt and pepper .. mix and test if you do not need any more seasoning .. or condiment that most of you like
